The immersion blender just might be my favorite and most-used kitchen tool. I use it for pureeing soup, blending smoothies, and now for making pancakes. Just dump in the short list of ingredients, blend away, and you have an easy & sugar-free batter that cooks up into fluffy little pancakes.
You may be wondering why there is only one photo in this post whereas I typically have at least 3 for a recipe. Well, for some reason I thought I could quickly snap a handful of pics on the floor while Lily played with her new toy kitchen a few feet away.
I was mistaken. She toddled over and grabbed a handful of pancakes before I could take any more photos.
Such is life with a curious & hungry walking 12 month old ;).
Blend & Pour Silver Dollar Banana Pancakes for Baby/Toddler

Ingredients (12 silver dollar pancakes)
- 1 medium-sized very ripe banana, peeled
- 1 large egg, preferably organic
- 1/4 tsp baking powder
- 1/4 cup whole wheat pastry flour
- vegetable oil or butter for frying
Instructions
Combine banana and egg in a blender. I like to use my immersion blender with its accompanying blender cup. Blend until smooth.
Add in baking powder and flour. Pulse a few times until combined. Do not overmix. Stir briefly with a spoon if needed. A few lumps are okay. Set aside.
Heat a bit of oil or butter in a large nonstick skillet over medium-high heat.
Pour desired amount of pancake batter into skillet and cook until bubbles begin to form on the surface of the pancakes and the bottoms turn golden brown, about 1-2 minutes. Flip and cook until the other side is golden brown, about 1 minute. Let cool to room temperature before giving to baby.
